Foods Lab

This space can accommodate 20 students, with kitchen units supplied with appliances, cookware, and lab equipment. It is utilized for cooking demonstrations and course labs such as Exploring Culture in Nutrition and Food Science

The space includes a camera and large television screen for group demonstrations and capability for remote learning. Specialty equipment include a texture analyzing machine and viscometers. Texture profile analysis seeks to quantify various physical properties such as hardness, adhesiveness, fracturability, cohesiveness, springiness, gumminess, chewiness and resilience by driving a probe into a sample at a specific rate, and repeating the compression.
